Publishers and authors are adapting to an emerging global market for cookbooks and wine books. It is accelerated by the bridges between cultures and lifestyles, thanks to the new media and the social networking services. No cookbook market is now an island.

1.-The Global Market. Buying and Selling. The Two Pillars.

Going global changed automobiles, film, music or drinks. This is at the start now for cookbooks and wine books, far more global than most other sectors of publishing.

The trends for cookbooks in the countries around the world are now very much the same, at a more or less advanced stage. The demand of the clients is driven by the same television formats everywhere. The concerns for healthy eating are growing across cultures. The same demographic and family issues reinforce the need for cookbooks to help to transmit recipes and food culture.

For publishers, it means that foreign rights have become essential for profits and survival. As the case of the automobile industry and others show, import and export go together, and help each other. The first key concept is to understand you will do better if you both buy and sell foreign rights, and establish long term relationship. The market has shifted east and south, the most interesting trade is now with Asia and Latin America, again an easy parallel with the automobile industry or the drinks industry.

2.- Lifestyle and Foreign Rights : Be Flexible

Consumers worldwide are changing their lifestyle, following the new media. This lifestyle is increasingly global, more so with the young who spend money. A lifestyle book for the young which works in one country is likely to be well received in another.

In Japan French wine, French pastry, and French outing have been stars for years. There is a lively market for western culinary books. The interest for western style cooking in the rest of Asia is much larger than western publishers believe now. For instance, the demand is increasing fast in China, with foreign cooking books rising to over 12% sales, while traditional Chinese cooking is stagnating, according to Chinese Publishers Magazine. At the moment most translations are sold by Japan, Korea and Taiwan to Mainland China. They have in common a different view on design and colors than the West, though it is changing.

There is a demand for Western content, but layout and design need some adaptation and experienced publishers know for instance that front covers changes are the one key point to accept to make deals happen. One interesting case study is the cover of Modernist Cuisine, white in English, in black in most other markets.

3.-Bestsellers, brands, cookbooks, and foreign rights.

Western publishers focus for foreign rights deals on best sellers. Cookbook bestsellers are driven by television, such as the bestseller lists for 2012 show both in the UK and the US. The British have always done better.

Their best, Jamie Oliver, Gordon Ramsay, Nigella Lawson or Lorraine Pascale sell more than their US counterpart, in a country 5 times smaller.

In most countries, the top 10 bestsellers in cookbooks are also heavily influenced by television food shows. The new young star is Jeroen Meus of the Netherlands, selling more than the number one from the US as a total of the past two years, in a country 20 times smaller.

In France, it is not television that makes bestsellers, but brands combined with low pricing. There are some television bestsellers, such as Cyril Lignac, who can be considered a brand known by everyone. Without TV show, one bestselling author that has foreign rights success is Trish Deseine.

Wine books have very few bestsellers. They are built on authors who are brands. There are really four in the foreign rights market. The historical number one has been "Bordeaux and its Wines", sold for nearly 150 years, by Editions Féret, with 18 Editions, usually at the top price for a wine book anywhere. There are three other British bestselling wine authors, Jancis Robinson, Hugh Johnson and Tom Stevenson.

4.-Digital Publishing and Foreign Rights

Outside the US, cookbooks and wine books have less than 2% of their sales as E-books. However foreign rights deals could help digital publishing for the culinary sector.

For instance digital publishers Cooklet from Poland and Caramelized from Germany have an international approach from the start for the design of their products. They are present at Paris Cookbook Fair, as well as Editions Alain Ducasse. "Mon Grand Livre de Cuisine" by Alain Ducasse is driven in its format as much by English than French, and is adapted to several other languages. The Chinese such as Qingdao Publishing are working on cookbooks read on the telephones.

When?

The next Paris Cookbook Fair will take place in February 2013, from Friday 22 to Sunday 24.It is one week after Valentine’s Day, and the Chinese New Year week long celebration February 9-15. New Delhi Book Fair is the first week of February, with Jerusalem Book Fair the week after. Salon du Livre de Paris and Bologna 50th Children Book Fair are one month later, from March 22 to March 28.

Where?

The Carrousel du Louvre main entrance is 99 rue de Rivoli, 75001 Paris, which takes you underground through one of the best shopping malls in Paris, to the inverted Pyramid. The entrance to the Louvre Museum is to the left, and Paris Cookbook Fair will be to the right, just after La Maison du Chocolat. As it is under the ground it is completely sealed off from the outside, and quite warm during winter. The Gourmand World Cookbook Awards will be at the same location, in a theater for 1400 guests. The Metro-Subway stop is Palais Royal-Musée du Louvre, on lines 1 and 7.
The two most famous English bookstores in Paris are on Rue de Rivoli, WH Smith at nº  248 , and Galignani, at 224. Within walking distance, there are some of the most famous foodies and shopping places in Paris, Angelina, Ladurée, Colette, and many others. Musée des Arts Décoratifs is 107, rue de Rivoli.

Who?

We have 30% more space than last year for foreign rights tables, trade stand, and publishers stars. We believe we will have a slight increase in European visitors from outside France, reaching 45% of professionals, a strong increase of visitors from other continents, most probably over 35%, with the French making up the balance with 20%.
The Gourmand World Cookbook Awards Gala event is one of the key factors for the international presence, with books from 171 countries competing in the Awards this year, aginst 162 last year, and 156 the year before.  It is the only sector of book publishing that benefits from such an Awards event with so many countries.

What?

Besides the foreign rights and co-editions book business, there will be much networking and entertaining. There will be show kitchen demonstrations, food and drink tastings, confe-rences, book presentations and launches, authors signings, culinary art and photography, music and dancing. One new feature will be WFWF-TV 2013, the World Festival of Wine and Food Television, bringing together TV food producers, broadcasters and their stars. The last meeting was in October 2011 in Beijing, organized by China Food Television and presided by Edouard Cointreau.

Why?

The legendary 3 star chef from the Waterside Inn Michel Roux has attended the fair every year from 2010 to 2012. He explained why in his speech as President of Honor of the Fair in 2012 : “This fair is absolutely unique. This fair is about respect. It gives a chance to everyone, whether you are big or small. Everyone gets attention here, and has an opportunity to get a close look at the culinary business. You can profit from the knowledge of professionals from all around the world in an absolutely unique way. Every young person who wants to be a professional in the gastronomy or culinary business has to be there”.
Last time, Alain Ducasse had scheduled a one hour visit. He stayed four hours…So did Pierre Gagnaire, Alain Dutournier or Claudia Roden, Lisa Ekus, and many others.

To be succesful, a party has to be a mix of people from different backgrounds, environments and cultures. This is the driving concept of Paris Cookbook Fair, with a mix of publishers, authors, photographers, writers, chefs, stylists, printers, professors and students from over 50 countries, with many coming from outside Europe.

Paris Cookbook Fair is a feast, with chefs demonstrations at the international and French show kitchens, conferences, Malaysian tribal food, luxury cookbook binding, the wine pentathlon, the International Bar, the beer tastings, and much more.

It is also a business platform where professionals can meet at their stands or at the international rights center to conduct trade in an easy, pleasant environment with no stress. The objective is to make the Paris Cookbook Fair the hub of the cookbook business worldwide. Children books have the Bologna Book Fair, comics have Angoulême, cookbooks and wine books have now Paris.

Everyone comes for the same purpose. However the diversity of the offer and demand is such now that there is something different for everyone, in price, in content and in style.

THE HEART OF PARIS

Paris Cookbook Fair this year brings cookbooks to a most prestigious location, Le Carrousel du Louvre. It is an honour for cookbook publishing to be in the heart of Paris, at the center of culture, romance and history of France. It is very important to build as much respect as possible for authors and publishers of cookbooks and wine books.

These books are usually the result of a team, often with the writer, the photographer, the food-stylist, the art director, the designer, and the publisher. Some culinary books take years of work before they are published. In fact, you can feel in the best cookbooks the heart of the author(s), just as you do in fiction books. Personnalities andcharacter shine through cookbooks as well.

We have tried to build a book fair where human values are respected, where the main motivation is not selling more carpet or furniture, or drive up ticket sales to visitors. We really care about the sector. We have been rewarded with strong support, and fast growth: we had planned to increase publishers floor space by 30%, in fact we had to double it. However, the best reward is that we now have made many friends among the guests, building what they call “the Gourmand Family”.

I am deeply grateful to all the authors and publishers. It also has been much fun. As my son says, it is not worth doing it if we do not all enjoy it. It is wonderful that with Paris Cookbook Fair, business and pleasure combine naturally as the ingredients of this food and wine books feast.
